Recipe: Smoked Mexican Cornbread

Summary: Not the most healthy recipe I could come up with, but incredibly tasty. Here’s a recipe for mexican cornbread to bake or smoke. It’s a winner!

Ingredients

  • 1 tsp – butter, melted
  • 3 tbsp – butter, melted
  • 2 cups – self-rising cornmeal (cornmeal, all-purpose flour, baking powder, salt, baking soda)
  • 1 cup – buttermilk (or i used 1 tbsp lime juice and then enough milk to make a cup)
  • 1 – large egg
  • 3 tbsp – white sugar
  • 1cup – frozen corn
  • 2 tbsp – cream cheese
  • 1/2 – sweet onion, diced
  • 2 cloves – garlic, minced
  • 2 – roma tomatoes, diced
  • 15 – nacho (pickled) jalapeno slices
  • 1/2 cup – shredded cheddar cheese

Instructions

  1. Pre-heat smoker/grill to 350 degrees. Brush a 9-inch cast iron skillet with 1 tsp butter to fully coat surface. Saute onions, tomatoes, corn and peppers in a skillet with olive oil. Add garlic when onions are soft.
  2. In a large mixing bowl, whisk the egg, buttermilk, sugar, cream cheese and butter. Then, stir in the self-rising cornmeal. Then, stir in the shredded cheese and the sauteed vegetables.
  3. Spoon batter into the prepared skillet and cook for 20-30 minutes on 350 until toothpick comes out clean.
  4. Serve with a pat of butter and enjoy!
