Greek Grilled Chicken Pizza

Recipe: Greek Grilled Chicken Pizza

GMF-Recipes8Backstory: Be sure to make at least 2 of these puppies if serving more than yourself. It’s a real crowd pleaser.

Ingredients

  • grilled chicken (or leftover greek stuffed chicken)
  • one large pizza dough (we get ours from the local pizzeria)
  • olive oil
  • ranch dressing
  • crumbled feta cheese
  • kalamata olives (preferably pitted and/or chopped, about 15 olives)
  • minced garlic
  • Cavender’s greek seasoning
  • dried oregano
  • mozzarella cheese
  • banana pepper slices
  • artichoke hearts
  • 1/2 sweet onion
  • 2 roma tomatoes
  • salt pepper

Instructions

  1. Pizza is one of those things that is so flexible, you pretty much can’t go wrong. That’s why I don’t have many of the proportions for the ingredients, just add as much as you like.
  2. Prepare the sauce by mixing ranch dressing (about 4 tbsp) with olive oil (about 2 tbsp), feta cheese (about 2 oz), minced garlic (about 1 tbsp), oregano (about 1 tsp), and Cavender’s greek seasoning (about 1 tsp).
  3. Dice the onions, slice or dice the tomatoes, slice the peppers, slice the artichokes, chop the chicken (no giggling!), and chop the olives.
  4. Roll out the pizza dough on a pizza stone or pan.
  5. Spread the sauce on the dough with a spoon leaving about 1/2 inch on the outside for the crust.
  6. Then, add toppings in your desired order. I think I added the onions and tomatoes first, then layered the rest on top.
  7. Add some mozzarella and a little dust of oregano if you like.
  8. Pre-heat the grill to 400 degrees and then cook the pizza for 12-14 minutes or until crust is desired crispness. Then, prepare to receive the compliments.
